CHICKEN WITH APPLE SAUCE

An unusual combination of flavours and an easy dish to cook. Pre-cook the chicken at home, or just take the leftovers from a roast chicken. For me, this evokes a taste of North Wales where I was camped beneath the wonderful cliffs of Cwm Idwal. What better place to experience the accessible magic of wild Snowdonia?

225g/8oz cooked chicken

1 apple, peeled, cored and chopped

1 small onion, peeled and chopped

1 stick celery, chopped

55g/2oz margarine

75ml/3fl oz double cream

1 spoon flour

Fry the celery and onion in half the margarine for a couple of minutes and then add the apple and cook for a couple of minutes more. Add 75ml/3fl oz of water, a little salt and pepper and simmer for a further two minutes until reduced by at least half and set this to one side. In another pan melt the remaining margarine, stir in the flour and cook for a minute before gradually adding the cream or milk. Cook gently until the sauce thickens. Add the chicken to the sauce and then add the apple/vegetable mixture. Keep on the stove over a gentle heat until hot right through. This is best served with instant mashed potatoes or noodles.

Variation

The celery may be omitted if not readily available. Try using a carrot in its place.
